Sausage-making hobby becomes thriving business endeavour
Gudi Loeffler shows off some of her fresh sausages, which have become a staple of the Truro Farmers Market.
Gudi Loeffler made her home in Nova Scotia when she emigrated to Canada from Germany in 1988. She brought with her the German tradition of sausage making, which initially was just a hobby, but turned into the Bavarian Restaurant & Meat Shop business in Economy.
In 1995 Loeffler decided to take her chances with the Truro Farmers Market and began trading as The Bavarian Sausage Station & Express. She realized there was a gap in the market for a quality sausage, so she made it her priority to source fresh, lean, inspected pork and beef. This, added to her spice blends, has developed into a range of low fat, low sodium and gluten free sausages, without fillers, by-products or preservatives.
Loeffler started with the traditional bratwurst, followed by the breakfast, Hungarian, Italian and one she calls “Currywurst”, with more recent additions being the all-beef brat and the all-beef donair.
Outside the market, you can enjoy some varieties barbecued, which range from mild to spicy, served on a bun topped with her famous cooked German sauerkraut, or take home some fresh sausages, sauerkraut and sauerkraut salad from her station inside.
Loeffler also works with her husband at their other business — Global Construction (Maritimes) — in Debert, which they started in 2002.
In her “spare” time, she likes to walk, ski, golf, garden and entertain. She has also been on the Truro Farmers Market board of directors for more than 10 years and is passionate about creating homemade quality products she can serve to her wonderful adopted community.
Loeffler has seen the market grow over the last 20 years and feels a sense of pride at being part of this community and being able to carry on some traditions from her home country with the help, of course, of a loyal clientele and some new friends.
